The best way is really to use free wifi where possible. If you find a good wifi connection, you can use WhatsApp for calls and send email (or use iMessage if both of you use iPhone)

I went to Australia in Jan '23 @Richard_1107649, and used a cheap 1-month data-only eSIM in my handset, and bought a £10 SMARTY add-on for emergency use.

I turned OFF the mobile data on my SMARTY SIM, and used the cheap data-only eSIM for mobile data whenever I couldn't use free Wi-Fi.
