We have just moved to SMARTY and are very happy. We have an old phone we would like to use very occasionally to monitor our dogs when we leave them in the car. So that old phone needs to connect to a data signal. But as we will only need it for a few days here and there, we wondered if it is possible to buy, say, a 10GB SIM card but for it to last until the 10GB has been used (possibly several months down the line).

Not at this moment in time @JaniceR_2161512.
You need to do something chargeable, or buy a plan, at least once every 6-months - according to the SMARTY terms & conditions (see section 9.4).
The terms & conditions are online at https://cdn.smarty.co.uk/files/SMARTY-Terms-And-Conditions.pdf.

@JaniceR_2161512 Smarty works on one month plans. You could purchase the smallest plan and auto renew monthly and currently that would be £6 per month. You can pause and not buy a plan for up to 6 months without the sim card expiring, but I do not think this is what you really want.

What will probably be more suited to this use case than Smarty is a true PAYG offering like that from 1p Mobile.
You can stick £10 credit on your account there, then data is charged at 1p per MB, which will be knocked off that £10 as you use it. The only caveat is that there is a minimum top up required of £10 every 120 days.
They also have a £30 one year package, so you can take care of it for the whole year in one go.
