Following the help sheet for group owner to change on of the groups numbers as below.
If you're a Group Owner, you'll need to log in to your dashboard, and select:
Menu > Account settings > Your number.
It does not display like the help text and I cannot select any other group member.

I think the dashboard option you want might be:
Menu > My Group plan
From there, you can remove an existing member (i.e. number), in addition you can + Add another SIM (i.e. number).
I guess to change a number, you'd need to remove a member, then add another SIM.

This is not what they're after. They want to bring across an existing number to a new SIM that they've gotten from you. I'm having the same issues at the moment.
It's impossible to do this using the dashboard.

I recall being able to do this in my Group Plan @mikeinashed.
After you sign-in to your account, try using the following link:
https://smarty.co.uk/dashboard/settings/phone-number
I found the link from my online dashboard option: Account Settings > Your phone number.
If you click through online, you should then see:
Switching from another mobile provider?
To keep your old number, enter a PAC code. To cancel your old number and keep your new SMARTY number, enter a STAC code. Your previous network can provide you with these.
Followed by a button labelled: "Enter my PAC or STAC code"
