do I need to do anything to my settings to use my phone in Canada or would it be easier to just get a sim while I'm there?

Cost of roaming outside the EU is horrendous. If your phone can take it, look at an e-sim to provide data and consider something like WhatsApp for any calls.
If you really want to roam on your smarty sim, then you will need a large wedge of credit added to your account to pay for it.

As advised by @MSF using Smarty outside the EU is prohibitively expensive !
Canada is in Smarty’s roaming band 2, data is 25 pence per megabyte.
There are 1024 megabytes in 1 gigabyte, so that is £256 per gigabyte !
If you have an unlocked phone or even a spare phone, get a local Canadian SIM card.
Alternatively, if your phone is eSIM compatible, get a travel eSIM from Airalo or Holafly. If unsure how these work, watch YouTube videos on them, of which there are many. I recommend the guy whose YouTube channel is called “Project Untethered”
