I am the OP, I can confirm this need is still ongoing (and growing)
Since my original post I've now got a second data connection to a router in the car, so three SIMs including my phone and home. I would like to be able to route between these devices using their IP (or DDNS like no-ip) without relying on a 3rd party system like tailscale, or requiring to pay for a hosted server somewhere external to my network to route the traffic. I would also like to access these from the general internet to access self hosted services like my Plex and Nextcloud.
Next year we a looking at getting a camper van..... you see where this is going! 😄
As I said before, I would be prepared to pay a small premium to add this to my package.

Have you tried using Cloudflare tunnels to access your services, I believe they should work and it wont cost anything. (although you do need to register a billing account). That how I originally accessed my CasaOS server
