When you say “poor coverage in France” that of course depends on the coverage that will be provided by the French networks that you will be roaming on.
On your driving tour, it’s likely that you will get good coverage in major towns and cities, but maybe not in rural areas.
Depending on the plan you have, you have a roaming data allowable of 12 GB. Depending on the length of your tour, you may exhaust that, and need to buy a data add on to confine to receive data connectivity.
