Time to Activate SIM ?

My contract with another provider ends 26 December, so I'm planning my move to Smarty.

If I were to buy a monthly SIM deal over the Black Friday weekend, would I be able to hold off from activating until nearer my current contract end date ? Was thinking maybe 15 December & then port my number over so it's all done before the Christmas holiday.
