SIM card for mifi in camper van
We have an unlimited sim in our mifi in the camper van for which we pay monthly. Is there an option that we can turn on and off so that we only pay when we are using it?

Unfortunately for you, each plan lasts for a month and cannot be paused midway and then restarted. Do you really need unlimited data? Could you save money by purchasing a smaller data plan? You dashboard history will show usage on previous plans and that may inform your choice.
You can pause your plan at the end of your current billing period (ie not immediately but before you are billed for next month). If the plan remains paused for more than 6 months it gets cancelled. See https://help.smarty.co.uk/en/articles/952720-how-do-i-pause-my-plan
