Number changing issues

Hello! 
If I take out a new deal and port my number to the new SIM card, does that mean my old sim card will no longer work, or does it revert to another number?

I want to change my number on the deal I have now (webchat said I can do this),  but I also need to keep my old number for a while to switch over everything it’s tied too 😮‍💨
