Is a data only sim faster than a data, voice & text sim?

No, it's the same. One thing to keep in mind, though, is that different devices support different 4G and 5G bands. So you could, for example, see different speeds from a Smarty SIM in a mobile broadband router to what you get from that same SIM in a phone.
